Corn flakes mixture/Savory snack

A little bit of crunch is essential now and then in life to jazz it up! ‘Mixture’ is what we call it is South India and ‘Chevda’ in other parts. This is a popular savory snack to enjoy with a cup of tea. I have not made it for a long time as it is easily available in stores with different kinds of grain, seed, fruit & nut combinations. But this is a very easy mix that takes less than 10 minutes. So why not try it!

savoury snack - cornflakes mixtureThis snack provides enough room for your imagination and lets you choose your favourite ingredients. We can easily relate it to trail mix. It is almost like an abstract painting with a mix of colours and textures.

Normally, the ingredients are deep fried in oil. I have used a little oil to roast it so there is a slim coating of oil that enables the salt and chilli powder to stick. There are other additions like grated potato chips and roasted chick peas that makes it better. This recipe is very flexible…so add more of any ingredient you like.

Ingredients

  • 1 cup mixed nuts (almond, peanuts, cashew, coconut slivers)
  • 2 cups corn flakes
  • 1/2 cup rice flakes
  • 1/4 cup raisins and cranberry
  • 2 tbsp vegetable oil (coconut or sesame)
  • 1 tsp sesame seeds
  • 2 dried red chillies
  • few curry leaves
  • 1/2 tsp red chilli powder
  • salt

Method

  • Roast nuts with a little bit of oil in a pan. Alternately they can be roasted in an oven. (Raw peanuts usually take the longest to roast so be sure to do that first before the other nuts.)
  • Roast the dry fruits a little and set aside.
  • Add corn flakes to the hot pan and toss until you can smell them being toasted.
  • Finally in a little oil, saute curry leaves, dry red chillies, sesame seeds and turn off the heat before adding chilli powder.
  • Add salt to it and mix it with all the roasted ingredients and toss to coat.
  • Store this in an air tight container.

I like to add a sprinkle of mango powder to add some tang to this mixture. This is a blend of different textures and lovely flavours coming together.

cornflakes mixture You can make it in larger quantity and send it as gifts. I need not mention that it is healthy, looks pretty and tastes delicious. Try adding some on salads to get a good crunch.

It is a great party food to nibble as you mingle with others. Most guests love it…I love it…probably, you too will!Savory cornflakes mixture This is a good pack-and-go snack when travelling! Snack on it when the urge strikes or with cold drinks!

      Thanks, Loretta! I like Chevda because it helps me limit snacking. Every time I end snacking I have to wash the chilli powder off. So that stops me from going back for more. That is how I practice self control! Hahaha!

  7. Oh, my, this is the kind of recipe I usually try to avoid! I could see myself sitting in front of the tv and munching on it until I looked down to see an empty bowl! It looks like a fun, spicier trail mix!
