Garlicky oven fries

Fries not fried!

This is a guest post by my daughter. She was tired of home made food and was craving fries. But she did not want them from any fast food outlet as they were condemned to be too oily. Being so picky she decided to oven roast potatoes and make her own fries.

Our household has a bunch of cooks who make my task difficult rather than making life easier. The expectation, demand, quality and taste has to be high enough to satisfy all of them. My husband is the non-vegetarian food specialist, my son is our grill master and daughter likes to experiment with haute cuisine. Invariably the brunt of boring, everyday cooking falls on me. So I welcomed her oven roast fries. Overall it was very tasty and I asked her to write that recipe for me. I would like to try it again whenever I have a junk food craving.

Ingredients

  • 3 medium sized potatoes cut into fries
  • 3 large garlic cloves
  • Cup of olive oil
  • 3 tbsp corn flour
  • pinch of paprika
  • dried or fresh parsley
  • salt and pepper to taste

Blitz cut potatoes in microwave for 3-6 minutes until they soften a little. In a bowl warm olive oil and minced garlic. IMG_9795 - CopyMix together corn flour, paprika, parsley and salt and pepper.IMG_9792 - CopyGather potatoes from the microwave and rub them into the cornflour mixture. IMG_9797 - CopyIn a foil lined baking tray arrange fries evenly and pour the garlic-olive oil over it.  IMG_9802 - CopyHeat oven to 350 degrees F and bake 35-40 minutes or until crispy and brown.1 friesAfter she tried it there was a suggestion. If garlic is crushed or made into a paste it can stick well to the fries.

    A family of cooks! Lovely. I like the fact that your daughter used cornflour on the fries, I think it makes them crispier.. am I right? I never thought of doing that.
